4 large Catfish filets
1 C Milk
½ C Flour
½ C White Cornmeal
½ C Yellow Cornmeal
1 T Citrus Twist
1 T Sage
1 T Thyme
2 T Cooking Oil
Cast Iron Pan
Soak Catfish filets in milk.
Mix together white and yellow cornmeal, flour, citrus twist, sage and thyme.
Coat catfish filets in cornmeal mixture.
Coat cast iron pan with cooking oil.
Place breaded filets in pan.
Place on grill.
5-8 Minutes each side.
