Meat N Taters

7/3/2026

Some recipes have fancy names.
This recipe tells you exactly what is happening immediately.
Meat.
N.
Taters.
Honestly, that kind of transparency deserves respect.
This is one of those backyard meals that somehow checks every box at once:
  • smoky
  • savory
  • buttery
  • crispy
  • fresh
  • loaded with flavor
  • and dangerously easy to keep eating long after you were supposedly “full”
You have crispy potatoes, sweet corn, peppers and onions sizzling on the griddle, plus juicy Awesome Shrimp bringing the whole thing together into one giant skillet of Midwest happiness.
Picture
And then — because apparently we still believed restraint was optional — everything gets finished with a garlicky balsamic drizzle that ties the entire dish together.
This is not delicate food.
This is “grab a plate and stand near the griddle eating directly out of it while pretending you are helping” food.
And honestly?
Those are usually the best recipes.

Meat N Taters

Ingredients
Griddle Mix
  • 1 pound red potatoes
  • 1 pound gold potatoes
  • 3 ears of corn, cut up
  • 1 red onion, diced
  • 1 green pepper, diced
  • ¼ cup cooking oil
  • 1 tablespoon garlic pepper seasoning
  • 2 pounds Awesome Shrimp
Garlic Balsamic Finish
  • ¼ cup olive oil
  • ¼ cup balsamic vinaigrette
  • 2 tablespoons garlic
Directions
Step 1: Prep the Vegetables
Dice the potatoes into bite-sized pieces.
Cut the corn into smaller chunks and dice:
  • Red onion
  • Green pepper
Place all vegetables into a large bowl.
Add:
  • Cooking oil
  • Garlic pepper seasoning
Mix thoroughly until everything is evenly coated.
Already smells good.
Dangerous start.
Picture
Picture

Time for the Griddle

Step 2: Brown the Vegetables
Place the vegetable mixture onto a hot griddle.
Cook until:
  • Potatoes begin browning
  • Corn gets lightly charred
  • Peppers soften
  • Onions caramelize slightly
You want the vegetables mostly cooked before adding the shrimp.
This is where the magic starts happening — sizzling potatoes, smoky veggies, buttery corn, and everybody suddenly wandering suspiciously close to the cooking area.
Step 3: Add the Awesome Shrimp
Place the Awesome Shrimp directly onto the griddle.
Cook a few minutes per side until:
  • Shrimp turn pink
  • Edges develop slight browning
  • Everything smells ridiculously good
Do not overcook the shrimp.
Rubbery shrimp makes everybody upsetti spaghetti.
Step 4: Mix Everything Together
Once the shrimp are cooked, combine them with the vegetables right on the griddle.
Let everything cook together for another minute or two so the flavors combine beautifully.
At this point, people will begin “sampling.”
Guard the spatula accordingly.

Garlic Balsamic Finish

Step 5: Make the Sauce
In a small bowl, combine:
  • Olive oil
  • Balsamic vinaigrette
  • Garlic
Mix thoroughly.
Then generously slosh it over the Meat N Taters mixture.
Yes.
“Slosh” is the correct technical cooking term here.
The balsamic adds tangy richness while the garlic ties the entire dish together with bold flavor.

Why This Recipe Works So Well

This recipe hits every flavor and texture perfectly:
  • Crispy potatoes
  • Sweet corn
  • Smoky vegetables
  • Juicy shrimp
  • Tangy balsamic
  • Garlic richness
It feels hearty without being too heavy and works equally well as:
  • a full meal
  • a cookout side
Picture
  • a tailgate dish
  • a cabin weekend dinner
  • or “whatever we can pile onto paper plates outside”
Which honestly describes some of the best meals ever made.

Serving Ideas

Serve Meat N Taters:
  • Straight off the griddle
  • With toasted bread
  • Alongside grilled steak or pork
  • With extra shrimp on top
  • With an ice-cold Sun Drop nearby
Want extra heat?
Add Cajun seasoning or hot sauce.
Want extra Midwest points?
Serve it directly from the griddle while everyone stands around pretending they are not going back for thirds.

Final Thoughts

Meat N Taters is Midwest Grill’n comfort food at its finest.
Simple ingredients.
Big portions.
Smoky flavor.
Minimal fuss.
Maximum happiness.
The combination of crispy potatoes, vegetables, shrimp, and garlicky balsamic goodness creates the kind of meal people remember long after the grill cools down.
This is backyard cooking exactly how it should be:
Fun, flavorful, slightly chaotic, and impossible to stop eating.
Pit Boss Grills Presents Mad Dog & Merrill Midwest Grill'n — where the griddle stays hot, the shrimp disappear mysteriously fast, and nobody has ever made “just a small plate.”

Ginger Lime Tea Rub Salmon on the Pit Boss

5/2/2026

When Backyard Grilling Meets Fresh Seafood

Backyard grilling usually brings a few things to mind right away.
Steaks sizzling over flame.
Brats rolling across the grates.
Maybe a rack of ribs slowly smoking in the background.
Seafood doesn’t always get invited to the party.
And that’s a shame, because fish — especially salmon — is one of the easiest and most rewarding foods you can cook on a grill.
Picture
Salmon cooks quickly, absorbs seasoning beautifully, and pairs perfectly with bold sauces and rubs.
This recipe takes advantage of all of that by combining teriyaki, garlic, and a bright ginger lime tea rub to create salmon that’s sweet, citrusy, slightly smoky, and incredibly satisfying.
It’s the kind of dish that feels restaurant-quality but is easy enough to make on a weeknight.
And when it comes off a hot Pit Boss griddle, it tastes like something special.

Why Salmon Is One of the Best Fish for Grilling

Salmon has several qualities that make it perfect for backyard cooking.
First, it has natural oils that help keep the fish moist during cooking. Unlike leaner fish that can dry out quickly, salmon holds its texture and stays flaky and tender.
Second, salmon has enough structure to handle the grill without falling apart.
And finally, salmon pairs incredibly well with sweet, savory, and citrus flavors — which makes the ginger lime tea rub the perfect companion.
When the sugars in the rub meet the heat of the griddle, they caramelize slightly and form a flavorful glaze on the outside of the fish.
That combination of caramelized seasoning and tender salmon is what makes this recipe stand out.
Picture
Picture

Ingredients

Salmon filet
½ cup teriyaki sauce
¼ cup garlic

Ginger Lime Tea Rub
3 oz ginger lime tea
3 oz Jamaican Oof Da seasoning
1 cup brown sugar
Mix all rub ingredients together thoroughly before using.

Ingredient Breakdown

Salmon Filet
Fresh salmon works best, but high-quality frozen salmon can also work well if thawed properly.
Look for filets that are bright in color and firm to the touch.

Teriyaki Sauce
Teriyaki adds sweetness and umami, creating a flavorful base marinade that complements the salmon beautifully.

Garlic
Garlic deepens the flavor of the marinade and adds a bold aroma.

Ginger Lime Tea
The tea adds bright citrus and subtle ginger notes that make the rub feel fresh and lively.

Brown Sugar
Brown sugar caramelizes slightly during cooking, creating a light glaze that coats the salmon.

Preparing the Salmon

Start by placing the salmon filet on a tray or shallow pan.
Pour the teriyaki sauce and garlic evenly over the fish.
Wrap the salmon and allow it to sit for a short time so the flavors begin to absorb.
This quick marinade gives the fish a base layer of flavor before the rub is added.
After the fish has rested, coat it generously with the Ginger Lime Tea Rub.
Press the seasoning gently into the surface of the fish so it sticks evenly.

Cooking the Salmon on the Pit Boss

  1. Heat your Pit Boss griddle to medium heat.
  2. A moderate temperature works best for fish because it allows the salmon to cook through without burning the sugars in the rub.
  3. Place the salmon filet onto the hot griddle.
  4. Allow it to cook undisturbed for several minutes so a light crust begins to form.
  5. Depending on the thickness of the filet, the salmon will take about 12 to 15 minutes to cook.
  6. You’ll know it’s ready when the fish flakes easily with a fork and the surface develops a lightly caramelized glaze.

Backyard Grilling Tips

Use a Flat Surface
A griddle or flat-top makes cooking fish easier because delicate filets won’t stick to grill grates.

Keep the Heat Moderate
High heat can burn the sugar in the rub before the fish finishes cooking.

Don’t Overcook
Salmon continues cooking slightly after it leaves the grill, so remove it just before it looks completely done.
Picture
Picture

Serving Ideas

Ginger Lime Tea Rub Salmon pairs beautifully with:
• grilled asparagus
• smoked vegetables
• citrus rice
• grilled pineapple
• fresh summer salads
It’s also excellent served in tacos or over rice bowls.

Variations to Try

Once you’ve made this recipe once, try experimenting with different finishing touches.
Great additions include:
• fresh lime zest
• sesame seeds
• chopped cilantro
• a drizzle of honey
• a splash of soy sauce
Each variation brings a slightly different personality to the dish.

Final Thoughts from the Grill

Salmon might not be the first thing people think about when they fire up the grill.
But once you try it with bold seasoning and a hot Pit Boss griddle, it quickly becomes a backyard favorite.
The combination of teriyaki, garlic, and ginger lime rub creates a dish that’s bright, balanced, and packed with flavor.
And the best part?
It cooks faster than almost anything else on the grill.
Which means dinner gets on the table quicker — and you get back to enjoying the backyard.

Blue Cheese & Crab Pizza

Blue Cheese & Crab Pizza (with Optional — but Let’s Be Honest, Mandatory — Awesome Shrimp)
For grillers who want their pizza to smell fancy, taste fancy, but still feel like Wisconsin.
This is not a normal pizza.
This pizza is what happens when someone at deer camp says:
“Hey, you guys think blue cheese and seafood would be good on this crust?”
And instead of saying no, everyone looks at each other like
“…well now we gotta try it.”
Picture
And THAT… is the spirit of Midwest Grill’n.
We don’t stop to think. We fire up the Pit Boss and see what happens.
This pizza is bold.
It’s confusing.
It’s the culinary equivalent of seeing a guy ice fishing shirtless at -3°.
You want to judge it — but you also respect it.
This recipe is for the brave.
If ranch is the wildest thing you’ve ever put on pizza — turn back now.
If you think seafood belongs only near water — this may ruin you.
If you love blue cheese so much you’d wear it as perfume — welcome home.
We’re grilling blue cheese + mock crab + olives + Parmesan like fancy food critics --
but also adding Awesome Shrimp because:
  • we like protein
  • we like chaos
  • we are FRIENDS OF FLAVOR
  • and 10/10 midwestern uncles agree: shrimp fixes everything
Picture
Ingredients
(gather these like you’re heading into battle with a spatula)
  • 1 Pizza Stone for your Pit Boss Grill
  • 1 Pizza Crust (homemade, store-bought, or whatever was on sale)
  • 1 Tub Blue Cheese Spread (the funkier the better)
  • 1 Package Mock Crab Legs (because we’re fancy, not financially reckless)
  • Awesome Shrimp — optional in theory // mandatory in practice 🦐
    • Grilled, pan-fried in garlic butter, sautéed, or stolen off someone else’s plate.
  • 1 cup Black Olives
  • 1 cup Parmesan Cheese
  • Optional toppings if you’re wild: red pepper flakes, lemon zest, extra cheddar (we don’t judge)
Directions
(read like a recipe — do like a ceremony)
  1. Preheat your Pit Boss and place the pizza stone inside so it gets piping hot.
A cold stone is like bad romance — disappointing and avoidable.
  2. Lay out your crust. Admire it. Whisper encouragement.
  3. Smear blue cheese spread across it like paint on a barn.
    Thick. Fearlessly thick.
  4. Chop mock crab legs. Pretend you caught them yourself even if they came from aisle 5.
  5. Scatter crab like snow at Lambeau in December.
  6. Shrimp Time:
    • Grill them.
    • Butter them.
    • Season them.
    • Pretend you’re on the Food Network.
    • Chop and add generously. (More shrimp = more bragging rights)
  7. Sprinkle olives and Parmesan like you’re casting a spell of delicious confusion.
  8. Slide onto the stone and grill until the cheese melts, the edges crisp, and neighbors start sniffing around like raccoons near a fish fry dumpster.
  9. Remove from heat and let sit JUST long enough to not wreck your mouth.
Slice. Serve. Watch the room go quiet as everyone processes what they just tasted.
Picture
Picture
Taste Breakdown
Blue cheese brings the funk.
Crab brings the coast.
Awesome Shrimp brings the BOOM.
Parmesan unites the flavors like a church potluck mediator.
Olives add that “who invited her? … actually she’s great” energy.
It’s seafood meets supper club.
Pizza meets cocktail hour.
Fancy meets flannel.
You won’t know if you love it or fear it until bite #2 --
and by bite #3 you’re finishing the whole thing.
When to Serve This Dish
  • When people think you only grill bratwursts? FLEX.
  • When you want to test friendships with blue cheese opinions.
  • When there’s an “R” in the month. (Seafood superstition bonus points)
  • Ice fishing weekend. Because contrast is comedy.
  • Friday Lent dinner — Catholic grandmas won’t know how to feel.
  • Any night you’re feeling bougie but still wearing sweatpants.
Conversation You Will Hear While Eating This
“I don’t know what’s happening.”
“Why is this good?”
“I want another slice but I need to sit with my feelings first.”
“Is this pizza… classy?”
“Pass the shrimp.”
Final Word
Seafood on pizza is bold.
Blue cheese on pizza is bold.
Blue cheese + crab + Awesome Shrimp grilled outdoors?
That’s Mad Dog & Merrill® bold.
We are not here to follow rules.
We are here to make memories, fill bellies, and scare cardiologists.

Toss them all together, and you’ve got shrimp with a kick that’ll wake up your taste buds faster than your morning coffee.
🥓 The Bacon Factor
Here’s where things get wild. Before the shrimp even touches the griddle, we crisp up a full pound of bacon. That gives you two wins: crispy bacon to snack on (try to save some for the plate!) and a perfect ¼ cup of bacon grease to fry your shrimp in. It’s smoky, it’s savory, and it’s the flavor base that ties the whole dish together.

  • 1 lb bacon
Directions:
  1. On your Pit Boss griddle, cook bacon until crisp. Reserve ¼ cup of bacon grease.
  2. In a bowl, mix shrimp with chipotle, chili lime, ancho, poblanos, and cumin until fully coated.
  3. Add shrimp directly on top of the bacon on the griddle.
  4. Grill 3–5 minutes, flipping frequently, until shrimp are pink, plump, and spicy perfection.
  5. Serve hot with the bacon (if there’s any left!) and a cold Sun Drop for balance.
🌮 Why We Love It
Shrimp recipes don’t get much better than this—bold spices, sizzling bacon, and the unbeatable flavor of Awesome Shrimp grilled to perfection on a Pit Boss. It’s fast, it’s fiery, and it’s guaranteed to make you the hero of your backyard feast.
Serve it with tortillas, pile it over rice, or just grab a fork and dig in. Either way, it’s a recipe that lives up to its name: Awesome

🍋🍒 Bonus Recipe: Sweet & Zesty Shrimp with Sun Drop & Cranberries
If you’re looking for a twist on the bold, smoky flavors of Southwestern Spicy Shrimp, try this Midwest-inspired version. We’re swapping some of the dry heat for a glaze made with Sun Drop soda and tart Wisconsin cranberries. The result? Shrimp that’s still got a kick, but with a sweet, citrusy balance and a glossy, crave-worthy finish.
Ingredients:
  • 2 lbs Awesome Shrimp
  • ½ cup fresh Wisconsin cranberries, chopped
  • 1 cup Sun Drop soda
  • 1 teaspoon ancho pepper
  • 1 teaspoon cumin
  • 1 tablespoon honey (optional, for extra glaze)
  • 1 lb bacon (because we’re not skipping that!)
Directions:
  1. On your Pit Boss griddle, cook bacon until crisp. Reserve ¼ cup bacon grease.
  2. In a small saucepan on the grill, simmer Sun Drop with cranberries until the cranberries soften and the mixture reduces into a tangy glaze. Add ancho pepper, cumin, and honey (if using).
  3. Toss shrimp in the glaze, then add them directly to the griddle with the bacon.
  4. Cook 3–5 minutes, flipping frequently, until shrimp are pink, juicy, and coated in that sweet-spicy cranberry-citrus glaze.
  5. Serve hot, garnished with extra cranberries or a lime wedge for a pop of color.
Why We Love This Twist
The original recipe is bold, smoky, and fiery. This alternate version leans bright and tangy—still packed with flavor, but with a Midwest twist thanks to cranberries and the unmistakable citrus fizz of Sun Drop. It’s proof that shrimp can go Southwestern or Northern and still come out deliciously Awesome
